Healthy Energy Balls


½ cup pitted dates
½ cup soaked walnuts (soak for 8 hours)
¾ cups raw almonds
3 tablespoons honey
¾ cups shredded unsweetened coconut
¼ cup raisins
¼ cup dried unsweetened cranberries
2-3 tablespoons barley powder
Extra coconut for rolling balls or sprinkling over the top of the bars.


Place almonds into food processor and grind into a meal texture. Add the rest of the ingredients, and process into a dough type mixture. Form into balls or press mixture into oblong pan and cut into bars. Roll balls in coconut or sprinkle coconut over bars. Keep refrigerated.
