Clam Linguine


2 lbs clams
1 16 oz package linguine
½ cup olive oil
¼ cup white wine
14 oz can diced tomatoes
3 cloves garlic, chopped
Parsley to taste
Crushed red pepper to taste
Parmesan Cheese


Start salted water boiling for pasta. Get all ingredients ready. Heat up olive oil in large saucepan on medium heat. Add 1/2 of your garlic and crushed red pepper. Cook 30 sec. to 1 minute. Add clams to saucepan and cook for about 1-2 minutes. Add pasta to boiling water. Add parsley, white wine, and tomatoes to the clams. Turn heat up to med-high. Clams should start opening. About 2 minutes before the pasta is done, drain from water and add to saucepan with clams and sauce. Toss and add a little more olive oil, parsley, crushed red pepper, and remaining garlic. Serve immediately. Sprinkle with parmesan.

Awesome! Since we found this recipe we've made it numerous times. We've substituted periwinkles/cocina and mussles instead of the clams with great results.
