Raw Tuscan Kale Salad

One of our New Year's resolutions for 2011 is to eat a wider variety of fruits, vegetables, whole grains, and beans. We feel that we are pretty good when it comes to healthy eating, but it's easy to get stuck in a rut.

Kale is one of the most nutritional vegetables that you can eat, but sometimes that's exactly how it tastes too. We've never eaten it raw before, only in soups and sautés. This salad was DELICIOUS. I ate mine as an entrée with a piece of teriyaki salmon.
